Chef from Il Saraceno restaurant in Cavernago (Bergamo), Roberto Proto is always looking for new dishes and excellence in the choice of raw materials. The basis of his cuisine reflects the origins of Campania, but his creativity leads him to interpret traditional fish dishes in a modern way.

His restaurant is reviewed by the guide de l’Espresso, by the Critica Golosa of Lombardy and, in 2014, he obtained the prestigious award from the Michelin Guide, which gave him his first star.
